Ingredients

- 250 g quark (or fromage blanc)
- 100 g powdered sugar
- 1 packet vanilla sugar
- 3 eggs
- 100 ml oil
- 400 g wheat flour
- 1 packet baking powder
- ½ tsp baking soda
- 1 pinch of salt
- 100 ml milk
- 2 L frying oil or fat
- fine sugar (for dusting)
Preparation
Pour the frying oil into a pot and heat to 180 °C.
Meanwhile, mix the quark with the sugar and vanilla sugar in a bowl. Then add the eggs and mix well. Slowly pour in the oil while stirring. Let the batter rest for one minute.
In another bowl, mix the flour with the baking powder, baking soda, and salt. Knead half of the flour mixture into the quark mixture.
Add the milk while kneading, then add the second half of the flour.
Once the oil is hot enough, take a spoonful of dough with a teaspoon and use another spoon to carefully slide the dough into the hot oil.
Fry the Mäuschen until golden brown, then let them drain on kitchen paper. While still hot, roll them in fine sugar and let them cool.
